The food I like during winter days

Warm greetings to everyone here. I'm glad participate in this contest. It actually about our favorite winter food. I have one special native meal which I will be sharing the methods in cooking this special meal to everyone.

What is that special meal?
It is called ifokore(water yam porridge)

Ingredients

Water yam (your choice of size)
Palm oil ( very important)
Salt
Pepper
Seasoning
Smoked fish
Boiled mockerel fish
Ponmo(cow skin)
Dried fish
Chopped onion(optional)
Blended locust beans (optional)
Meat/fish/chicken broth

Methods of cooking

  1. Peel the water yam and cut it into small cubes or slices. Rinse the yam pieces with water to remove any dirt.

  1. Grate it with a manual grater or blend it in a blender. (Note: blender can make it too smooth so avoid too much pressure)

  1. Pour enough broth or water into the pot that can cover the yam pieces but, If you prefer it thicker, add less broth. Add salt, pepper, maggi, chopped locust beans(optional), put the dried fish and ponmo into the water and cover the pot to cook for 4-5mins

  1. You can add the grated yam in smaller pieces into the boiled ingredients. Also add smoked fish, dried fish,boiled fish or meat and palm oil at this point for added flavor. Cover the pot for 5minutes.

  1. Reduce the heat, stir the porridge and cover the pot. Allow the porridge to simmer for about 10-15 minutes, or until the yam is soft and easily mashed with a fork.

  2. Once cooked, remove the pot from the heat and use a wooden spoon or masher to mash the yam into pieces . If the porridge is too thick, you can add more broth or water.

  3. Taste and adjust the seasoning if needed.
    Serve the ifokore hot,enjoy and see the cold disappear!
