A quick and easy but healthy potato pottage with fluted pumpkin leaf

Hello, hive top chef and foodies beehive community, come lets make a quick and easy potato with fluted pumpkin leaf in response to the #qurator weekly cooking competition.

I had this meal for breakfast because it was quick and easy to make but so healthy with nice flavor and rich in nutrients, in less than 40mins this delicious meal was ready so it was a very quick one

One good thing about this meal is that it's not just quick and easy, but it's budget-friendly because here in Nigeria, this is the season for sweet potatoes, and they are quite affordable, likewise fluted pumpkin leaf.

Ingredients and its preparation

  • I used 4 medium sizes of sweet potatoes which I washed, peeled, and cut into cubes then set it aside

  • I used 2 dry fish (bonga fish) which I washed and removed the bones and set aside as well

  • I used Half a ball of onions which I peeled, washed sliced, and set aside

  • 2 cups of shredded fluted pumpkin leaf.

  • 1 knorr cube for seasoning.

  • I washed and pounded some crayfish (200g) with peeled 1 ginger, 2 cloves of garlic, and 2 turmeric.

  • 4 Tablespoon of palm oil because I love lots of oil in my pottage.

  • 3 teaspoons of black pepper.

I have to prepare all my ingredients to make everything easier and faster.

Let's cook.

I added 2 cups of water to the peeled potatoes in the pot, placed it on the cooker, and allowed it to boil, immediately it started boiling, I poured in the oil.


As it boiled down, I added the fish and crayfish mixed with the ginger, garlic and turmeric, I added the seasoning cube, salt for taste, dry pepper and allowed it to cook down.


I allowed it to cook down for 30 minutes, then I poured in the shredded fluted pumpkin leaf and onions.

Just 2-3 minutes after adding the pumpkin leaf and onions, I turn off the light, and my quick and easy potato potage is ready to be served.


Potato pottage is among my best meals because potatoes are fiber-filled and also a good source of energy, fluted pumpkin leaf is filled with antioxidants, calcium, and iron so the combination of potatoes with fluted pumpkin leaf gives you that healthy and delicious 😋 meal,

Yesoo we are so at least is affordable now and pumpkin leaf too as it's raining now.
I consumed too much of this meal because it's so delicious.
